Chocolate Chip Cookies

Ingredients
  

For the flax/chia egg:
  • 1 tbsp ground flax or chia seeds
  • 3 tbsp water
For the cookies:
  • 120 g vegan butter oat-based
  • 150 g brown sugar
  • 1 tsp vanilla extract
  • 1 flax/chia egg see above
  • 90 g oat flour
  • 50 g almond flour
  • 80 g wheat flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • Chocolate chips, nuts, whatever

Instructions
 

  1. Make the flax or chia egg first: mix 1 tbsp of ground flax or chia seeds with 3 tbsp of water and let it sit for 5 minutes until it becomes gelatinous.
  2. Preheat your oven to 190°C (375°F) and line a baking tray with parchment paper.
  3. Beat the vegan butter and brown sugar together until light and creamy.
  4. Add the vanilla extract and flax/chia egg and mix until well combined.
  5. Add the oat flour, almond flour, wheat flour, baking powder, and salt. Mix until a dough forms.
  6. Fold in the chocolate chips and any other additions you like.
  7. Scoop the dough onto the lined baking tray, leaving enough space between each cookie for them to spread.
  8. Bake for 8-10 minutes until the edges are golden but the center still looks slightly underdone. They'll firm up as they cool.
  9. Leave on the tray for at least 5 minutes before eating. Or don't. We understand.
