The bottom layer is a dense, chewy walnut and date crust. The middle is a dark chocolate coconut cream that sets firm and fudgy. The top is a blueberry cashew layer that’s somehow both creamy and bright and tastes like something from a fancy dessert menu.
Yes, there are three separate components, which sounds like a lot of effort, but none of them are difficult and none of them involve any heat. You blend, you layer, you wait. That’s it. The most involved thing about this recipe is the patience required between layers, which if you’re anything like me is the hardest part.
The blueberry layer on top is the one that really gets people. The frozen blueberries blended with cashews and coconut cream and lemon juice turn into this beautiful deep purple, slightly tangy, incredibly creamy filling that looks as good as it tastes. It’s something you make once and immediately start thinking about when you can make it again.
Store it in the freezer if you want clean slices, or the fridge if you prefer a softer texture. Either way it’s incredible, and either way it will not last long.

- Make the bottom layer: Add the dates, walnuts, almond flour, maple syrup, and vanilla extract to a food processor. Blend until the mixture comes together and holds when pressed. Press firmly and evenly into the base of a lined pie or springform pan. Place in the freezer while you make the next layer.
- Make the middle layer: Whisk together the coconut cream, cocoa powder, and maple syrup until smooth and well combined. Spread evenly over the bottom layer. Return to the freezer until set, at least 30 minutes.
- Make the top layer: Drain the soaked cashews. Add them to a blender or food processor along with the dates, coconut cream, frozen blueberries, lemon juice, and maple syrup. Blend until completely smooth and creamy.
- Assemble: Pour the blueberry layer over the set chocolate layer and smooth the top.
- Set: Store in the fridge for a softer texture or the freezer for cleaner slices. If freezing, let it sit at room temperature for 10-15 minutes before slicing.
